Description: I am so excited to share one of my staple recipes in my home — fried rice! This is such an easy meal to make, and a great way to use left over rice. You can totally play with the ingredients and measurements, just go with what feels right! Here’s an idea of the recipe I usually follow, but most of the time I just go off of a feeling and what I have left in the fridge. Ingredients: 3 tbsp. Avocado Oil 1 Onion 2 stalks of celery 1 large carrot or 3/4 cup frozen carrots 3/4 cup frozen peas 1 teaspoon ginger 4 gloves garlic 2 cups of cooked rice A splash of Soy sauce A splash of Sesame Oil 1 tsp Pepper 1 tsp garlic powder A splash of fish sauce 1 bunch of green onions 1 1/2 cups of raw spinach 2 eggs, either fried on top or scrambled into the rice Heat oil in a large wok and add onions, carrot, celery, ginger and garlic. Cook for a couple of minutes, until veggies begin to soften. Add frozen peas and leftover rice. Let cook until rice softens and everything can be easily mixed. Add soy sauce, pepper and fish sauce. Mix. Add green onions and spinach. Allow spinach to wilt for a minute or two. Serve with fried egg, or alternatively, scramble eggs and mix in with the rice.
